Hugo and Victor are childhood friends who grew up together in the south of France. A few years ago, the two began dreaming of a culinary venture that would unite them in their great passion: truly high-quality chocolate. The pair's prestigious patisserie in Paris looks more like an elegant jewelry boutique. Against a backdrop of deep black walls, the desserts are displayed in glass pockets. Like many chef-patissiers in Paris, they also work on seasonal collections at the same time.
The seasonal flavors change every few months depending on the season, while chocolate, caramel, vanilla and lemon are the stars all year round. In addition, the boutique offers a wide variety of products such as macaroons, excellent jams, candied chestnuts, choux pastries and more. Choosing what to taste and take was of course unbearable, it is impossible to remain indifferent to the sight of the giant caramel ball, or the lemon pie. Finally, I decided to go for the pomegranate rosé. I am a chocolate person, but now it is chestnut season and I wanted to try something special. I took the rosé and together we walked towards the Tuileries Gardens. A small green chair that seems to be waiting just for me peeks out from between the bare juniper trees, calling me to sit down.
I sat down in front of the fountain on a sunny winter day, took out my rosary, and savored it.
There are simply no words that could describe the pure pleasure of chestnut cream and puff pastry. The puff pastry was very crispy and the chestnut cream filling was simply amazing! The filling was just right. Not too much so that it would wet the puff pastry and not too little. You can savor every bite.
